Strawberry Rhubarb Muffins

Strawberry rhubarb muffins mix two popular fruits in an easy to prepare recipe. If you know me by now (and I hope you do!), then you know that I'm always on the prowl for EASY recipes. This one fit the bill.

And as most of you will realize, I'm a better baker than photographer (working on that :), so I tend to rely on others for amazing photos.

Let's check out just what we'll need to make these delicious muffins:

Strawberry Rhubarb Muffins

Ingredients

2 cups flour

1/2 cup sugar

3 teaspoons baking powder

1 large egg

3/4 cup milk

1/3 cup vegetable oil

1 teaspoon vanilla

1 cup mixed rhubarb and strawberries

For the Topping

2 tablespoons white sugar

1/4 teaspoon cinnamon

Instructions

1. In a large bowl mix dry ingredients. In a medium bowl, beat egg. Add to dry ingredients and mix.

2. Add remaining liquid ingredients to dry mixture. Mix, but do not overmix. Add fruit.

3. Pour into 12 paper cup lined muffin tins.

4. Sprinkle 1/4 teaspoon topping on each muffin, if desired.

5. Bake at 350° F for 20-30 minutes or until done.
