1 recipe Pastry for Lattice Crust Pie
5 cups strawberries, halved
3/4 to 1 cup sugar
1/3 cup all purpose flour
2 tsp. finely shredded lemon peel or
1/2 tsp. ground cinnamon
Milk (optional)
Sugar (optional)


Prepare pastry for Lattice-Crust Pie. On a lightly floured surface, flatten one dough ball.. Roll from center to edges into a 12-inch circle.

To transfer pastry, wrap it around the rolling pin; unroll into a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry.

Preheat oven to 375 degrees F. In a large mixing bowl combine the sugar and flour. Stir in the strawberries and lemon peel or cinnamon.

Gently toss the berries until coated. Transfer berry mixture to the pastry-lined pie plate. Trim bottom pastry to 1/2 inch beyond edge of pie plate.

On lightly floured surface, roll remaining dough into a 12-inch circle.

Cut into 1/2 inch strips. Weave strips over filling.

If desired, brush pastry top with a little milk and sprinkle with sugar.

To prevent overbrowning, cover edge of pie with foil. Bake for 25 minutes, remove foil and bake for additional 25 minutes.

Cool on wire rack.

Makes 8 servings
