Strawberry Jam Muffins

A hidden ingredient creates a surprise in these strawberry jam muffins!


2 cups flour
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 large egg
1/2 cup brown sugar
2 tablespoons strawberry jam
3/4 cup milk
2 tablespoons butter or margarine, melted
2 teaspoons vanilla
1 1/2 cup fresh diced rhubarb


Combine all dry ingredients except the brown sugar. Whisk together brown sugar, egg and jam; then beat in butter, milk and vanilla. Add rhubarb.

Pour mixture over dry ingredients and mix until just moistened. Fill muffin tins until about 2/3 full.

Bake at 400° F, until golden and tested done, about 20-25 minutes.
