Easy Strawberry Daiquiries and Mixed Drinks
Easy strawberry daiquiries may just be the summer refresher that you're looking for. Definitely cool, strawberry daiquiris were a favorite of the American author, Ernest Hemingway.

Prepare one of these great mixed drink recipes, grab a copy of The Old Man and the Sea, and head out to the backyard and your favorite chair or hammock. You won't even notice the heat! ENJOY!
2 cups strawberries, hulled
1/2 cup powdered sugar
1/3 cup dark rum
1/4 cup lime juice
Lime zest for garnish
For strawberry daiquiries, mix berries, sugar, rum and lime juice in a blender
container. Cover and blend until smooth.
Garnish with lime zest.
Makes 6 servings
Strawberry Daiquiries Syllabubs
1 lb. strawberries, hulled and quartered
6 Tbsp. white rum or wine
1 Tbsp. caster sugar
9 1/2 fl. oz. carton double cream
strawberries, halved and extra lime zest to decorate
Put the strawberries in a large bowl with 3 Tbsp. rum or wine and 1 Tbsp. caster sugar. Using a fork, break berries into big chunks to release some of the juices. Set aside.
Pour the cream into a large bowl. Finely grate the zest and squeeze the juice from one of the limes. Stir into the cream and add the remaining rum or wine and sugar. Whisk with an electric hand whisk until thickened but not too stiff.
Remove thin strips of zest from the remaining lime and reserve for decoration. Cut the lime in half and rub the cut side around the rims of four glasses.
Dip the rims in caster sugar. Divide the strawberry daiquiries mixture between the glasses and pile spoonfuls of the syllabub mixture on top. Decorate each with a strawberry half and twists of lime zest.
1/2 cup tequila
1/3 cup orange juice
1/4 cup lime juice
2 tablespoons sugar
2 cups mango chunks
2 cups whole frozen unsweetened strawberries
2 cups ice cubes
In a blender
combine tequila, orange juice, lime juice, sugar, mango chunks and strawberries. Cover and blend until smooth. With the blender running, add ice cubes, one at a time, through the opening in the blender lid. Mixture should be slushy. Pour mixed drink into glasses.
Makes 5 (6-oz.) servings.

1 cup dry, red wine
3 cups low-cal cranberry juice cocktail, refrigerated
2 cups strawberries, hulled and chopped
2 medium apples, cored and chopped
1/8 teaspoon ground cinnamon
In a large pitcher, stir all ingredients together. Allow to stand for 30 minutes before serving.
Place ice in glasses and serve.
Yields about 3/4 cup of sangria per serving.
