Santa Claus Cookie Recipe

  • 1 cup sugar
  • 1/2 cup softened margarine or butter
  • 2 tablespoons milk
  • 1 teaspoon grated lemon peel
  • 1 egg
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Heat the oven to 400 degrees F.

Mix sugar, margarine, milk, lemon peel and egg. Stir in the flour, baking powder, baking soda and salt.

Shape dough into 1 1/4-inch balls. (If you want to make these cookies in the shape of a lollipop, insert a popsicle stick into each of the dough balls). Place the balls 2 inches apart on an ungreased cookie sheet. Flatten each to about a 2 1/2-inch diameter with the greased bottom of a glass dipped in sugar. Bake for 8-10 minutes, or until the edges of the cookies are a light brown. Cool completely.

To decorate: Prepare a powdered sugar glaze by beating 1 1/2 cups powdered sugar with 1/4 teaspoon vanilla and 2-3 tablespoons of milk. Beat until smooth.

Spread the cookies with the powdered sugar glaze. Press on miniature marshmallows for the tassel of the cap. Sprinkle the top third of the cookie with red sugar. Press 2 currants for eyes and a red cinnamon candy for the nose. Sprinkle the bottom third with coconut for the beard.

This recipe makes 18 cookies.
