Easy Pie Crust Recipe

"Flaky" Pie Crust Recipe
1 1/3 cup to 1 1/2 cup flour
1/4 pound butter or
4 tablespoons butter and 4 tablespoons shortening
1/8 - 1/4 cup ice cold water
1/4 teaspoon salt
Cut the butter and shortening into small pieces. Put in a food processor bowl. Add flour.
Process until the mixture resembles coarse meal. While the food processor is still working, add a few drops of cold water.
The dough should be forming into the shape of a ball. Let the dough "sit" and chill.
Roll the dough out between two sheets of wax paper or plastic wrap.
Place in a lightly greased pie pan. Prick sides and bottom of the crust. Cover with buttered foil, greased side down. Weigh down with rice and beans or purchased pie weights.
Bake for 10 minutes in a preheated 475 degree oven. Remove foil and weights and bake for 10 additional minutes. If the edges brown too much, place a pie shield over it while baking.
10-inch Rich Easy Pie Crust Recipe
1 1/2 cups flour
2 tablespoons solid vegetable shortening
4 tablespoons butter
1/8 teaspoon salt
1/4 cup cream, half and half
Using the same instructions as above, using cream instead of water as your liquid.
Use a food processor for easy mixing.
Use frozen sweet butter, margarine or solid vegetable shortening.
Use bleached, pre-sifted all purpose flour.
To prevent soggy crusts, brush beaten egg whites over your crust before adding the filling.
Let the dough "sit" and chill for 30 minutes to make rolling easier.
