The countdown for Christmas has reached the critical stage. Most everyone is caught up in a shopping and cooking frenzy....gift lists are being double-checked to make sure that everyone is accounted for....grocery lists are being edited, cards are being mailed (or e-mailed) and for those of you who haven't made it to the Post Office yet....well, better luck next year :)
In all this fuss, we sometimes forget the true meaning of Christmas....peace, brotherhood, sharing, caring and....GIVING.
This edition of Susie's Strawberry Jammin' Ezine is dedicated to giving back to the number one guy around...SANTA!
We're all familiar with him and/or what he stands for. He's the guy who knows all-- who's been naughty....who's been nice. He's the guy who gives, gives and then gives some more without expecting anything in return. He embodies the true meaning of the old addage, "It's better to give than to receive." He may be a figment of someones imagination, but the values he stands for are universal. At least on this holiday, no one should go unnoticed. Everyone should be worthy of a gift, no matter how small.
So in the spirit of this holiday season and as a tribute to Santa, I am offering the following easy cookie recipes. Before you head off to sleep on Christmas eve, be sure to leave a plate full of these goodies near the tree for "your" Santa to discover and realize just how much you appreciate him/her...:)
Holiday Cookie Recipes
Peanut Butter and Jelly Cookies
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup peanut butter
1/2 cup margarine
1 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup finely chopped peanuts
Jelly or jam
In a large mixing bowl, cream the sugars with the peanut butter and margarine. Add the egg, then stir in the flour, baking powder, and salt. Mix well. Cover the bowl and place it in the refrigerator for 3 hours.
When your dough has been refrigerated for at least 3 hours, preheat the oven to 375 degrees F.
Shape the dough into 1-inch balls. Roll them in the chopped peanuts.
On a lightly greased cookie sheet, place the balls approximately 3 inches apart.
Using your thumb, make an indentation in the center of each cookie.
Bake for 10-12 minutes.
Remove from oven, and spoon a small amount of strawberry jam into the thumbprint.
Cool for 2 minutes and then store in an airtight container.
Makes 3 1/2 dozen cookies.
Strawberry Thumbprint Cookies
1/2 cup packed brown sugar
1/2 cup margarine
3 tablespoons cocoa
1/2 teaspoon vanilla
1 cup all-purpose flour
1/4 teaspoon salt
strawberry preserves or jam
Preheat the oven to 350 degrees F.
In a mixing bowl, cream the brown sugar with the margarine. Add the cocoa, vanilla and egg.
Stir in the flour and salt. Shape the dough into balls, then place on an ungreased cookie sheet, leaving about 3 inches between each ball. Press your thumb into the center of each cookie.
Bake for 8-10 minutes.
Remove from oven and place on a wire rack. When the cookies are cooled, spoon strawberry jam into the center of each one.
Leave these cookies on a decorative plate....add a cup of hot cocoa for good measure.....and don't forget to leave a light on for "your Santa."
