Strawberry Ice Cream Recipes

You'll be "scooping" up the rewards when you try our strawberry cheesecake ice cream recipe. Combining two of my favorite flavors, this recipes is based on a simple strawberry puree. Add some cream cheese, and you've got a dessert to die for! If you're an ice cream lover with a penchant for cheesecake, this is one recipe you won't want to pass up. Try it and you'll see (and taste) what we mean.

Strawberry Cheesecake Ice Cream

Ingredients:

2 cups (480 ml) half-and-half
1 1/2 teaspoons pure vanilla extract
4 ounces (115 grams) cream cheese, room temperature
3 large egg yolks
2/3 cup (130 grams) granulated white sugar
2/3 cup strawberry puree (sauce)
1 cup chopped, fresh strawberries


Strawberry Puree:
For strawberry puree, place one 20-ounce bag (570 grams) of thawed, frozen unsweetened strawberries in a blender along with 1/4 cup sugar. Process the berries until they are pureed. This should make 1-1/4 cup (50 grams) of puree. This can be stored in the fridge for up to 10 days.


In a small saucepan, combine the half-and-half with the vanilla and boil to the scalding point (when the milk begins to foam). Remove from heat and set aside.

In a stainless steel bowl, beat the egg yolks, sugar and cream cheese until light and fluffy. (You can use a wire whisk or an electric beater).

Gradually add in the half-and-half mixture. Beat constantly so the eggs won't curdle.

Place the stainless steel bowl over a saucepan of gently boiling water, and stir until the custard thickens enough to coat the back of a wooden spoon.

Remove the custard from the heat but continue stirring for a few minutes.

Now add the strawberry puree. Cover and let cool to room temperature.

Refrigerate the custard until it is cold (preferable overnight).

Transfer the cold custard to the chilled container of your ice cream maker. Process according to the manufacturer's instructions. Once made, add in the fresh, chopped strawberries. Transfer to a chilled container and store in the freezer.

Make about 3 cups of ice cream.
