Strawberry Cheesecake Muffin Recipe
These strawberry cheesecake muffin recipe whips up in a jif and can be made fresh for breakfast. All the ingredients you need can be found in your pantry and fridge. I made these muffins this morning for a special Saturday morning treat! Easy and delicious!
Ingredients:
4 ounces cream cheese
1/4 cup powdered sugar
2 1/2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
1 1/4 cups milk
1/2 cup brown sugar
1/3 cup butter or margerine
1 teaspoon grated lemon rind
1/2 teaspoon vanilla extract
1/4 cup strawberry jam
Instructions:
Preheat oven to 375° F.
In a separate bowl, mix the cheese and the powdered sugar until creamy.
Combine all dry ingredients: flour, baking powder and salt.
Mix the egg, milk, brown sugar, melted margerine, lemon rind, and vanilla extract. Stir into the dry ingredients.
Spoon 1/2 of the batter into muffin cups.
Top with 1 tablespoon of the cream mixture and 1 teaspoon of jam. Spoon the remaining batter on top.
Bake for 20 minutes or until done. Cool in pan. Remove muffins and cool on a baking rack.
Makes 12-18 muffins.
