Peppermint Pinwheels
Ingredients:
- 1 cup sugar
- 1 cup softened margarine or butter
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon peppermint extract
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
Instructions:
Mix sugar, margarine, eggs, vanilla and peppermint extract. Stir in the remaining ingredients. Divide the dough into halves. Stir 1/2 teaspoon red or green good color into one half. Cover both halves and refrigerate 1 hour.
Roll plain dough into a rectange, about 16 x 9 inches, on a lightly floured surface. Repeat with the colored dough. Roll doughs together about 1/4 inch thick. Roll up tightly, beginning at the 16-inch side. Wrap and refrigerate for at least 4 hours.
Heat the oven to 400 degrees F. Cut rolls into 1/8 inch slices. Place 1-inch apart on an ungreased cookie sheet.
Bake 8-10 minutes. Remove immediately from the cookie sheet.
Should make 7 dozen cookies.
