No need to get in the car and drive to your favorite IHop restaurant. The fixin's for our easy pancake recipe are right in your fridge and cupboards.

Easy Pancake Recipe
Ingredients
- 1/2 cup milk (or buttermilk)
- 2 tablespoons butter or margarine (melted)
- 1 egg
- 1 cup flour
- 1/2 teaspoon baking soda
- 2 tablespoons sugar
- 1/2 teaspoon salt
Mix the milk, butter and egg in a bowl. Combine the flour, baking soda, sugar and salt and add them all at once to the first mixture. Stir until just moistened. Lightly butter or grease a griddle or frying pan and set over moderate heat until a few drops of cold water sprinkled on the pan form skittering globules. Pour about 1/4 cup of the batter (per pancake) onto the griddle. Cook until bubbles form on top and the undersides are lightly browned. Turn with a spatula and brown the other side. Place finished cakes on a heated plate in a very slow (200°) oven until ready to serve. Top with strawberry jam, fresh strawberries, or strawberry syrup.
