You know the scenario...you're in the middle of preparing a recipe and suddenly you discover that you're missing an important ingredient...Or maybe the cookbook you received from your friend in Italy uses the metric system and you're still thinking in pounds and ounces.

Don't panic! The following list of tips will save you time and unneeded aggrevation. Skim through this page, get familiar with these terms and even print out this list for easy posting on your pantry door or kitchen cabinet.

Easy Substitutions

1 cup self-rising flour = 1 cup all-purpose flour + 1 tsp. baking powder + 1/2 tsp. salt

1 cup cake flour =1 cup all-purpose flour minus 2 Tbsp. flour

1 cup all-purpose flour = 1 cup cake flour + 2 Tbsp. cake flour

1 tsp. baking powder = 1/2 tsp. cream of tartar + 1/4 tsp. baking soda

1 tsp. cornstarch = 2 Tbsp. all-purpose flour

1 Tbsp. tapioca = 1 1/2 Tbsp. all-purpose flour

2 large eggs = 3 small eggs

1 egg = 2 egg yolks (for custard)

1 egg = 2 egg yolks + 1 Tbsp. water (for cookies)

1 cup sour cream = 1 cup milk + 1 Tbsp. lemon juice

1 cup yogurt = 1 cup buttermilk or sour milk

1 cup buttermilk or sour milk = 1 Tbsp. vinegar/lemon juice + 1 cup milk

1 cup fresh milk = 1/2 cup evaporated milk + 1/2 cup water

1 cup fresh milk = 3-5 Tbsp. nonfat dry milk powder + 1 cup water

1 cup honey = 1 1/4 cups sugar + 1/4 cup water

1 square unsweetened chocolate = 3 Tbsp. cocoa + 1 Tbsp. butter or margarine

1 Tbsp. chopped fresh herbs = 1 tsp. dried herbs or 1/4 powdered herbs

1 tsp. dry mustard = 1 Tbsp. prepared mustard

1 small clove garlic = 1/8 teaspoon garlic powder

1 tsp. pumpkin pie spice = 1/2 tsp. cinnamon, 1/4 tsp. ginger, 1/8 tsp. allspice, 1/8 tsp. nutmeg

1 tsp. apple pie spice = 1/2 tsp. cinnamon, 1/4 tsp. nutmeg, 1/8 tsp. cardamom

1 tsp. allspice = 1/2 tsp. cinnamon, 1/2 tsp. ground cloves
