Here's an elegant chocolate strawberry recipe to add to your collection of cheesecake recipes.

I've never been shy about my love of cheesecake, and when I ran across this strawberry cheesecake recipe, well, I knew that I'd want to share it with others.

Although easy to prepare, this recipe will win you rave reviews. Frosted with sour cream and chocolate, this easy strawberry recipe bakes up into a creamy delight and is perfect for those special occasions where you need a fool-proof, but impressive dessert!

Chocolate Strawberry Cheesecake

Ingredients:

Crust:

  • 1-1/2 cups chocolate wafer cumbs
  • 1/2 cup finely chopped almonds
  • 1/4 cup butter, melted

Filling:

  • 2 (8 oz) packages softened cream cheese
  • 2/3 cup sugar
  • 3 eggs
  • 12 oz pkg (2 cups) semi-sweet chocolate chips, melted, cooled
  • 1 cup whipping cream (heavy cream not Cool Whip)
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla
Topping:

  • 1 cup dairy sour cream
  • 1-1/2 teaspoons vanilla
  • 1/2 ounce (1/2 square) unsweetened chocolate, melted

Instructions:

Preheat your oven to 325 degrees F. Grease a 9-inch springform pan and set aside.

  • In a large bowl, blend all the crust ingredients. Pat into the bottom and sides of your springform pan. Refrigerate
  • Beat the cream cheese and 2/3 cup sugar until smooth
  • Add eggs, one at a time, beating well after each addition
  • Add the melted chocolate chips and blend.
  • Add the whipping cream, 2 tablespoons of melted butter and vanilla. Beat until smooth
  • Pour into the springform pan and bake for 55-65 minutes, or until set.
  • Cool in pan for five minutes. Remove sides of pan and let cool completely

  • In small bowl, combine sour cream, 1-1/2 tablespoons vanilla and 1 teaspoon sugar; stir until smooth. Spread over cooled cheesecake. Drizzle with 1/2 ounce melted chocolate.
  • Place in fridge for at least 4 hours before serving
